Beerbecue Flank Steak Fajitas

1 (1 1/2 lb) trimmed beef flank steak
salt and pepper to taste
Let Marinade overnight in:
1/2 cup ketchup
1/4 cup molasses
1/3 cup white vinegar
2 tsp black pepper
1 tbsp sugar
1 tsp salt
1/4 tsp cayenne
1/4 tsp cumin
1/4 tsp allspice
1/4 tsp cinnamon
1 cup strong beer

Grill the flank steak for about 6 minutes on each side. Slice at an angle. Serve with warm tortillas, grilled bell peppers, grilled onions, and salsa.

Bacon-Wrapped Hamburgers

1⁄2 cup shredded cheddar cheese
1 small onion, chopped
1 egg
2 tablespoons ketchup
1 tablespoon grated parmesan cheese
1 tablespoon Worcestershire sauce
1⁄2 teaspoon salt
1⁄8 teaspoon pepper
1 lb ground beef
6 bacon, strips diced
6 hamburger buns, split

Combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into six patties. Wrap a bacon strip around each; secure with a toothpick. Grill beef to preferred doneness. Discard toothpicks. Serve on buns with perferred toppings. No grill? You can bake Bacon-Wrapped Hamburgers in a baking dish at 350°F for 25 to 30 minutes or until beef is no longer pink.

Roast Sticky Chicken

4 tsp salt (can reduce to 2 tsp.)
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme, dried
1 tsp white pepper
1/2 tsp garlic powder
1/2 tspblack pepper
large roasting chicken or 4 small roasting chickens
large onion, quartered

Blend spices together.  Set aside. Remove insides from chicken and wash thoroughly. Rub chicken inside and out with the spice rub, also some under the skin. Put onion inside cavity of chicken. Put chicken in a large zip lock bag and marinate several hours or overnight. When ready to cook, preheat oven to 250 degrees. Place chicken in large roasting pan and cook 5 hours (yes that’s right, 5 hours – don’t worry, it’s safe at that temperature). After the 1st hour, spoon some of the drippings over chicken about every 30-45 minutes. After cooking, let chicken rest for about 10 minutes before carving.
