Whole Pumpkin Treats!

Next time you open up a pumpkin to carve a jack-o-lantern consider taking a bit of extra care to scrape out the seeds and the flesh of the gourd to make yourself some tasty treats!

Roasted pumpkin seeds are a fun and healthy snack! All you need to do is scrape the seeds out of the pumpkin and rinse them in cold water to remove any pumpkin that is still attached to your seeds! Then spread your seeds out on a cookie sheet and coat them in olive oil and a sprinkling of salt!

Place them in your oven at 300 degrees for about 15 minutes or until they look golden and scrumptious! Serve warm!

 

The super stringy bits of the pumpkin can go straight into your compost. But anything else you scrap out of the inside of your pumpkin you can toss into a big pot on your stove top! Add some water and simmer this pumpkin mixture for about 20 minutes. Once the pumpkin is cooked you can use your immersion blender or your food processor to make your pumpkin into puree!

 

This puree can be quite simply made into pumpkin soup, by adding some salt and pepper!

Alternatively, you can use the pumpkin puree to make yourself some Pumpkin Bread! For this bread that I made with my pumpkin, I added a layer of streusel in the middle of the batter!

Streusel is generally a combination of chopped nuts, cinnamon, brown sugar and chocolate chips! Happy Pumpkin-ing!
